Belgian historian Peter Scholliers explains the rich tradition of Belgian cuisine.

7 November 2008

In his latest book, "Food Culture in Belgium", the Belgian historian Peter Scholliers explains the rich tradition of Belgian cuisine.

The book is in English and is part of the series "Food Culture around the World".

Seven chapters treat the long-term history of Belgium's gastronomic culture. Belgium boasts a rich culinary tradition thanks to the fact that before its independence, it was influenced by a number of reigns including Celtic, Roman, Spanish, Austrian, French, Dutch and German periods.

The book is meant for outsiders and also offers information on typical Belgian ingredients, Belgian cuisine, eating out, health and diets.
