Dutch among worlds best restaurants

The best restaurant in the world is not in the sunny Mediterranean, but in Denmark. Noma in the capital Copenhagen came out tops for the second time running in a ranking of the world’s 50 best restaurants produced by British magazine Restaurant. It is based on a poll of international chefs, restaurateurs, gourmands and critics.

Two Dutch restaurants ranked on the top 50 list. Top chef Sergio Herman’s Oud Sluis restaurant is now 17th on the list, climbing up two places from last year, while De Librije in the eastern town of Zwolle climbed down from 37 to 46 in the rankings.

In 2010 Noma succeeded the 2006-2009 Spanish winner El Bulli as the leading restaurant. Two Spanish restaurants are also second and third on the list. The three top restaurants are forerunners of molecular gastronomy - a newly-developed style of cooking that makes use of scientific advances in the transformation of ingredients, as well as the social, artistic and technical components of food in general.
