TOKYO - France's Michelin guide launched its highly anticipated Tokyo edition Monday, for the first time awarding stars to every restaurant as it hailed the quality of the city's cuisine.

It is the first edition outside of the Western world for the renowned red book, which can make or break restaurants in Europe and had been awaited with trepidation by many in Japan's restaurant industry.

The Tokyo edition awarded a record 191 stars for the 150 restaurants it listed. It is nearly double the 97 stars given to restaurants in Paris and more than triple the 54 it issued for New York.

"Tokyo is becoming the global city with the finest cuisine, the city in the world with the most stars," Jean-Luc Naret, the director of the Michelin guides, told a news conference to launch the book.

"It is thanks to the incomparable quality of the products and cooking techniques used, and to the heritage and culinary traditions handed down from generation to generation and which continue to develop thanks to the talent of its chefs, that the Tokyo Michelin Guide has given stars to all restaurants."

In the Michelin guides for other cities, it is common for a restaurant to be listed without being awarded stars.

About 60 percent of the restaurants listed in the guide serve Japanese cuisine. Most of the rest are French restaurants, along with a few serving Italian, Chinese or Spanish food.

Eight restaurants were honoured with the full three stars. Another 25 were awarded two stars and 117 received one star.

The top eight included three traditional Japanese restaurants -- Hamadaya, Kanda and Koju -- along with the sushi houses Sukiyabashi Jiro and Sushi Mizutani.

Three French restaurants also received the full three stars -- Joel Robuchon, L'Osier and Quintessence.

Published in both Japanese and English, the guide will hit bookstores Tuesday evening.
